The use of local or regional produce is strived for and the produce available locally will determine what items appear on our menus. The most important aspect of our cooking is freshness and quality of ingredients. There is an abundance of game in season available from the Wicklow Mountains. Fish and shellfish come predominantly from the East Coast and the local farmers supply Wicklow beef and lamb.
